Favorite Cookbook

With my many allergies, I have learned to adapt many of my favorite recipes through taste. Same as when you stop eating beef or pork and only eat chicken, turkey, and fish, like I do. You find yourself experimenting with stuff. I have learned to make a mean smothered turkey chops, macaroni and cheese, and smothered chicken. However, when I can't figure stuff out ( still having problems with bread :) ), I turn to this cookbook. Cooking Free by Carol Fenster, Ph.D.. She is also the author of Wheat-Free Recipes and Menus. Cooking Free is a terrific cookbook for those that have multiple allergies like me. I do change a few things in some recipes (like the cornbread - I modified it because we like cream corn in it), but most are really good. The flour blend on page 276 is good for many. I like to use cornstarch and garbanzo/fava bean in mine. You can twik things to fit your taste, but do buy this book if you are just starting out.

This is my first post of many I hope.

For many years now, my children have been encouraging me to do something, write a book, open a restaurant, anything to address my allergies and educate other people. I think that it is time I listen. I started posting on other sites my opinion but I think that it would be better if I just created a blog.

As a child growing up, I didn't know I had any allergies. My dad had too many to name. Eventually as a teenager I was told I had the usual "environmental" allergies. It wasn't until I started having children that I developed food allergies. As you can see from the name of the site, I am allergic to dairy, eggs, and wheat. I have not been told I was allergic to gluten but I find that when I try to avoid wheat, I end up avoiding gluten a lot. I was shocked when the doctor told me. I didn't want to believe him. Over the course of time, I have learned to get used to this new life.

As I continue to blog, I will share a lot of my experiences with this new life.
